What's on the table

Three things, done right.

Hibachi cooked in front of you, sushi cut to order, and a small bar that pours an honest drink. No 90-item menu — just the good stuff, the way Lawrence has loved it for years.

No. 01

Hibachi

Steaks, chicken, shrimp, scallops, lobster — cooked on the iron in front of you, with the soup, salad, fried rice, vegetables, and sherbet that have come standard since day one.

No. 02

Sushi

Nigiri, sashimi, and rolls cut to order at the bar — not pre-made, not rushed. Samplers if you want a little of everything, and a few specialty rolls the chefs are proud of.

No. 03

The Bar

Cold beer, hot sake, plum wine, and a short list of cocktails. Sit at the bar before dinner, or stay after — the seats are open as long as we are.

Every hibachi dinner includes

Japanese clear soup, a salad with our ginger dressing, hibachi vegetables, fried rice, and sherbet — because dinner should arrive in more than one course.

From the kitchen

The kid who couldn't see over the table.

Truman started at Kobe when he was in middle school — bussing tables he could barely see over and ducking out of the way of flying shrimp.

He worked every job in the building from there. Bus boy. Dishwasher. Server. Prep cook. Hibachi line. Sushi bar. By his mid-twenties, there wasn't a station he hadn't pulled a shift in, or a regular he didn't know by name.

Last year, he bought the place. Same building. Same grills. Same chefs who taught him how to flip an egg, throw a shrimp, build a volcano out of onion rings. The only things he's changed are the ones that needed it.

"I grew up watching kids leave here happy. I want to make sure my niece — and her kids — get to leave just as happy." — Truman, Owner
The Show

Dinner with a side of theater.

If you've never seen a hibachi grill in motion, here's what to expect. If you have — well, you know.

  • i. The onion volcano Concentric rings, a splash of oil, and a column of flame tall enough to feel in the front row.
  • ii. The shrimp toss Open your mouth at the right moment and dinner comes to you. Miss it and you owe the kid next to you a quarter.
  • iii. The egg trick Spatula. Air. A whole egg back in one piece. Don't ask how — it's the question every kid leaves with.
  • iv. The staff The chefs have been here longer than most of us have been adults. They remember birthdays, anniversaries, and which kid is afraid of fire.
Word of Mouth

Regulars do the talking.

Twenty-something years, hundreds of birthdays, the occasional first date. The kitchen's still here, and so are the people who keep coming back.
